INGREDIENTS

  • 2 medium or 1 large beet, skin intact
  • ½ teaspoon pure sea salt
  • 3 cups (750 ml) filtered water or spring water

PRIMARY FERMENTATION

  1. Wash the beet and cut it into ½- to 3/4-inch (1 to 2 cm) pieces.
  2. Put the beet in a 1-quart (1 liter) wide-mouth glass jar with a tight-fitting lid and add the salt.
  3. Pour in the filtered water, leaving a 3/4-inch (2 cm) gap between the liquid and the lid.
  4. Stir to dissolve the salt.
  5. Tightly seal the jar and place out of direct sunlight in a cool spot.
  6. Leave the liquid to ferment for 3 to 5 days, stirring or shaking daily.
  7. After around 3 days, taste the kvass.
  8. When it is as dark and sour as you like it, the kvass is ready to bottle.

What Does Beet Kvass Taste Like?

Beet kvass is an acquired taste. It’s salty and earthy, with little sweetness, so it’s a great drink if you want to avoid sugars in your diet.
