  • 1 tablespoon minced garlic

Instructions

  • 2-3 tbs fresh chopped parsley
  • 1 tsp smoked paprika

Instructions

  1. Chop Lion’s Mane mushroom into generous pieces.
  2. Toss in olive oil and allow to bake in the oven, with garlic at 350 degrees for 30-40 mins. Turn midway through. The mushroom will shrivel considerably as the water dries out.
  3. Then place mushroom and garlic mix in a food processor and pulse 4-5 times until the mix is crumbled down in smaller chunks.
  4. In a separate bowl mix together the Greek yogurt, lemon, egg, soy sauce, vinegar, chopped parsley, salt, and pepper.
  5. Use a whisk to smoothly mix the wet ingredients.
  6. Add onions and breadcrumbs and pulsed mushroom mixture.
  7. Using a spoon to measure equal portions of crab cakes, form the mixture into a cake
  8. Heat coconut oil in a non-stick pan on medium heat and fry the lion’s mane mushroom cakes until lightly browned on both sides.
